A culinary education is a fine art - and few cooking schools practice the culinary arts as well as NECI. We transform your passion for food and cooking into a career, training future chefs, foodservice managers and restaurant managers with an emphasis on hands-on experience. Our cooking classes are small (7:1 student/teacher ratio), and our culinary school extends out into the real-world, where our restaurant, catering and foodservice operations ensure that you get ample on-the-job training.

NECI offers an Associate's Degree, a Bachelor's Degree, and a Certificate Program, enhanced by paid, personalized internships in cookery, food management and hospitality management. And we're located in Vermont, so the quality of your culinary education is mirrored by the quality of life. New England Culinary Institute graduates chefs and food service managers of distinction - cooks for whom the art and science of food is blended into a rewarding culinary career, whether as a chef or a manager.

In our kitchens you'll find one instructor for every seven students. With a seven-to-one student/teacher ratio, a neci instructor can devote almost 10 minutes each hour to you. (With a twenty-to-one ratio, that time drops to just three minutes per student.) So you receive extensive individual attention and training. In a profession where learning specific skills is crucial, this extra time can make the difference between merely being familiar with a skill and being proficient at it. Learning to cook properly is very difficult. Many skills must be acquired; with each one, a student needs a great deal of help. Whether boning a chicken or making a bearnaise sauce, you need personal attention and expert instruction. NECI's small class size gives you the advantage of learning every procedure right at the side of a dedicated teacher.

At NECI, you'll spend 75% of your training doing hands-on cooking in our professional foodservice operations. You'll learn by participating in the ongoing activities of actual working kitchens, experiencing all types of food preparations. The breadth of educational opportunities is extensive ~ infinitely greater than you could receive in a single workplace alone and more meaningful than simply watching demonstrations. (We supplement the hands-on experience with visiting guest lecturers and traditional classwork in such areas as nutrition and food science.)

Working in actual restaurants, bakeshops, cafeterias, and catering and banquet operations quickly develops far more than technical skills. You become comfortable with the speed and flow of professional kitchens. You learn the teamwork and cooperation necessary in these fast-paced atmospheres. You also have an added incentive to do your best every day, because the dishes you prepare are served to actual paying customers.
